I prefer to do 17x8's w/5"bs - it gets the tire in a little better for more clearance when turning. Most of these cars are lowered a bit, and have some tire up in the fenders, so 5"bs give you more room for that.
We have actually used mustang bullet wheels on alot of cars - they look great and are super cheap - we even make a billet center cap for them so you can lose factory plastic mustang center cap. But, they are 5.72" of backspace, and are slightly in more than you want. A 1/4" or 3/8" wheel spacer moves it out enough to work well.
Overall, shoot for a tire size that gives you 26x9 overall in the front and around 27x11 in the rear.
On the rears of an e-body, the 17" ones are too far in. But we've use many of the 18X10 bullet wheels on e-bodies with a 1/4" wheel spacer - I think they have 7.24" of bs if I'm not mistaken.

www.americanmuscle.com they have the bullets in alot of sizes. We always go there and browse the site for various sizes that may work nice on a project. The style is the same as a torque thrust, so they look great on the old cars. With the right tire sizes, it's almost impossible to tell they're not 15's without checking the sizes.
We have Challenger in here right now with those wheels on it in the charcoal color. Tires are Nitto NT555's with 255/45/17 on front and 285/40/18 on the rear. It all looks great on the purple car.
